Anyone not squishy and not melee.

Make sure you take some early magic resist, also some sustain will make his laning phase difficult.

Karthus, Xerath, Morgana, Cass...but these only counter Ryze before he gets tanky..after that...no

He may be strongest laning mage in game because of his skills that scale with mana.

I recently picked up Ryze. The traditional mids I've had trouble with so far are Cassiopeia, Kassadin and Mal'Zahar. I've yet to face Karthus, Xerath or Anivia. I've lost to Orianna, too, but that was with jungle runes and I see no reason for the matchup to be particularly unfair.
